Stuffed Cobia - Crab meat Imperial

STUFFED COBIA WITH CRABMEAT IMPERIAL

Use Thick Cobia Filets

1 yellow pepper

1 red pepper

1 celery stalk

1 purple onion

1 green pepper, finely diced

1 tbsp. Creole mustard

1 tsp. salt

1/2 tsp. white pepper

1 c. mayonnaise

Crabmeat

Paprika

Sautee yellow and red peppers, celery, green pepper and purple onion. Add mustard, salt, white pepper, paprika and mayonnaise. Mix well. Add crabmeat and mix. Slice a pocket on one side of the filet, gently stuff with crabmeat mixture. Broil and garnish.
