MONTGOMERY, AL (WSFA) - Silver Spoon restaurant owner, Leslie Bailey, shares her recipes for making Shrimp CocktailMexicana and a Tre Leches Cake to help celebrate Cinco De Mayo.
Tre Leches Cake!
1 Yellow sheet cake (make or buy)
½ Cup of Whipping cream
½ Cup of sweetened condensed milk
½ cup evaporated milk
1 cup of cool whip
½ cup of toasted coconut
¼ cup of Macadmia nuts
Bake cake according to directions. Let cool. Poke holes all in the cake.
Mix together the whipping cream, sweetend condensed milk and evaporated milk. Pour over cake.
Chill for several hours.
Right before serving, frost the top with Cool Whip and sprinkle toasted coconut and Macadamia nuts.
½ pound of cooked, peeled and deveined shrimp. Remove tails too.
1 large Avacado, pitted, peeled and diced
¾ cup of finely chopped onion
¾ cup of chopped scallions
1 cup of diced tomatoes
4Tbs of jalenpeno chopped
1 can of Rotel
1/3 cup of fresh lime juice
2 tbs of minced garlic
A dash or two of hot sauce
