Use these recipes to make a delicious summer brunch using ingredients found right here in Alabama. Buy Alabama! products are highlighted in red.

Bacon Pimento Cheese

  • 2 oz. chopped pimento
  • 8 oz. grated cheddar cheese
  • 2 T Alaga Hot sauce
  • 2 T Worcestshire Sauce
  • 1/2 to 3/4 cup mayo
  • 1 tsp. garlic salt
  • 5 pieces Kelley's Bacon
  • 2 chopped green onions

Cook bacon, drain and crumble. Mix all ingredients well. Add more mayonnaise if necessary to achieve sp readable consistency. Can serve in hulled out tomato on Oakview Farms lettuce for nice presentation.

Tomato Pie

  • 3-4 large tomatoes
  • 10 fresh basil leaves (chopped)
  • 3/4 cup chopped green onion
  • 1 c. grated, sharp cheddar cheese
  • 1 c. grated mozzarella cheese
  • 1 c. mayonnaise
  • 1 9 inch deep dish, baked pie shell
  • 1 T Alaga Hot sauce
  • salt & pepper
  • Mrs. Stratton's Chicken or Tuna Salad

Preheat oven to 350 degrees. Place sliced tomatoes on paper towels on a wire rack in one layer. Sprinkle with salt and let drain 10 minutes. Then pat with paper towel to absorb remaining moisture. Layer tomato slices, basil and green onion in pie shell. Season with salt and pepper. In a bowl, mix the grated cheeses, mayonnaise and ALAGA Hot sauce. Spread this mixture on top of tomatoes. Garnish with more basil and green onion. Bake for 30 minutes or until lightly brown. Serve warm. Yield: 6 servings.

Boil 4-5 Red Diamond Sweet Tea bags as normal. Pour over 1 can frozen lemonade concentrate. Garnish with lemon and oranges
