Apple Cake

Recipe from Janet Welter of Kelso, Mo.

Prep Time: 20 minitues
Total Time: 55 minutes 

4 medium apples-dice with peel left on
1 cup sugar

Pour sugar on apples in large bowl. Let set until apples get a moist look.

1/4 cup vegetable oil
1 egg

add to the apple-sugar mixture and mix.

Sift together:

1 cup flour
1 tsp. baking soda
1 tsp. apple  pie spice or cinnamon spice

Mix with the apple mixture and add:

1 tsp. vanilla
1/2 cup chopped nuts (optional)

Stir together. Pour into a greased 8x8 inch pan and bake at 350* for 35 minutes or until a toothpick inserted in center comes out clean.

If you want an icing mix 1 cup powdered sugar and 1 tbsp water and drizzle over the cake while warm not hot.

Servings: 9 servings, depending on size of serving
