My Cheese Sauce

Recipe from James Patterson of Madison, Wis.

Total Time: 1 hour 

4 TBSP Butter
1/3 cup flour
2 cups milk
4 oz Cream Cheese
2 cups shredded cheese (any kind)
2 TBSP spices
Salt & Pepper to taste

1. Over low heat melt butter, add flour and mix together until paste.

2. Add milk, 1/2 cup at a time and mix well. Add Cream cheese in small chunks until blended. Add shredded cheese and spices to taste.

3. Vary the type of cheese and spices for various sauces. Cheddar and swiss with italian seasoning for a mac & cheese. Pizza blend cheese, chili powder and paprika for nacho cheese sauce.

Servings: Varies on dish made with sauce
Comments:  If you put it the fridge overnight it will set up into a cheese spread for crackers.
