Baked Chicken Salad

Here is Elizabeth Morgan's recipe for Cooking With Gas.

Elizabeth is promoting 'Art On The Avenue' sponsored by the Highland Park Association. WSFA's own Kyshia Perry is going to be in the parade at 9:00 A.M. on April 26, 2003.

Here's the recipe:

Baked Chicken Salad

1 cup mayonnaise

2 cups fresh cooked, cubed chicken

1 can cream of mushroom soup

1 cup cooked rice

3/4 cup chopped celery

1 medium onion grated

1 can water chestnuts

diced Ritz crackers

Salt and pepper to taste

Slivers of blanched almonds

Mix all ingredients except crackers and almonds. Pour into a buttered 3 quart casserole. Top with almonds and crushed Ritz crackers. Dot with butter and bake 45 minutes at 350 degrees.
