Cold soba noodles

 

1 lb soba noodles (soba or buckwheat noodles available in Asian section of grocery store)
2 T sesame oil
3 T soy sauce
2 T chile oil
1 T spicy bean paste
1 T minced ginger
1 clove garlic, minced
1 tsp sugar
1 bunch scallions, chopped
1 cucumber, peeled and diced
Minced fresh cilantro

Cook noodles According to package directions. Cool and then coat with sesame oil. Stir together soy sauce, chile oil, bean sauce, ginger, garlic, and sugar. Mix with noodles. Top with scallions, cucumber, and cilantro.
