Hearty, Healthy Hash Brown Casserole

2 lbs hot pork sausage

1 can fat free Cream of Chicken soup

2 cups reduced fat (NOT "fat free") shredded cheese

8 oz. low-fat or fat-free French Onion dip

1 cup low fat sour cream

1 cup chopped green onion

1/2 cup chopped green pepper

1/2 cup chopped red pepper

30 oz frozen shredded hash browns, thawed.

Cook and drain sausage thoroughly in a colander. Combine the rest of the ingredients. Put 1/2 of the mixture in a lightly greased 9x13 baking dish or deep cast iron skillet. Cover mixture evenly with well-drained sausage, and cover with remaining potato mixture. Bake at 350 for 45 minutes or until golden brown.
