Pork Loin On A Bed Of Succotash

Pork Loin

1 3-6 lb pork loin

1 tsp black pepper

2 tsp lemon pepper

2 tsp garlic salt

1 tsp seasoning salt

2 tsp minced onion

3 tsp Dales seasoning

Rinse Loin and allow to reach room temperature so that seasoning can absorb better. Mix all seasoning together in a bowl to form a paste. Massage all seasoning into loin for about two minutes. Allow pork loin to marinade for about 30 minutes. Wrap loin in a foil tent and bake for one hour and 30 minutes.

Old Fashion Down Home Succotash

1 package whole kernel corn

1 package half frozen okra

1 package baby lima beans

1 can of red diced tomatoes

4-5 sliced cook bacon crumbled

salt and pepper to taste

pinch of sugar

1/2 cup diced onion

In a saucepan, fry 4-5 slices of bacon, drain grease from saucepan, and crumble bacon in the saucepan. Add whole kernel corn, okra, lima beans and cook until tender (25-30 minutes). Once tender, add salt, pepper, sugar, and onions to taste. After vegetables are done, add diced tomatoes and simmer for an additional 10 minutes (cover saucepan). Drain vegetables of excess juices and serve for a delicious vegetable treat.
