Artichoke Crusted Tilapia

4 Tilapia Filets frozen

1/2 cup of artichokes

1/2 cup of red and green chopped peppers

1/4 cup of scallions

4 tbs. of no fat Italian dressing

10 low fat Ritz crackers crushed

4 tbs. of low fat Parmesan cheese

Spray Pam on pan and mix all of the other ingredients in a bowl and spoon on top of frozen tilapia. Bake at 350 degrees for 18-20 minutes until fish is flaky.
