Alabama Paella

1/4 cup diced onion

1/4 cup diced celery

1/4 cup diced bell pepper

2 tbsp. Minced garlic

4 tbsp. Olive oil

2 cups chicken stock

2 cups rice cooked in chicken stock

3 strands saffron

4 oz. Chicken breast

10 shrimp w/tail on 8 mussels

3-4 oz fish fillet ( we use snapper)

6 oz. Diced smoked sausage

1/2 tsp salt

1/2 tsp black pepper green peas and pimento for color (optional)

Prepare the rice, chicken, mussels, fish, sausage and shrimp. When done mix all ingredients together in frying pan, and fry until hot.
