Pound chicken till even 1/4 inch thick. Place cheese in chicken and roll up. Wrap prosciutto around chicken. Baste with olive oil and bake in oven until an internal temperature of 165 degrees F
Cut tomatoes in half and bake at 200 degrees for 4 hours. In a sauce pot add olive oil till smoking and sautee onions and garlic till golden brown. Add tomatoes and simmer for 1 hour. Add basil and oregano and puree.
Combine orzo and chicken stock and bring to a boil. Then simmer till all liquid is absorbed and orzo is tender. Add shredded parmesan cheese and salt and pepper to taste.
Place orzo on plate and shape like a heart. Place chicken on orzo. Ladle sauce around orzo and enjoy!
