Sauteed Shrimp Margarita


2 yellow tomatoes, seeded and diced

1/2 pint grape tomatoes, halved

1/2 diced jalapeno

1/2 diced red onion

1 tbsp. garlic

juice of one lime

1/4 cup extra virgin olive oil

1/4 cup chopped green chilies

2 tbsp. chopped oregano

2 tbsp. chopped chives

2 tsp. black pepper

1 tsp. salt

1 tbsp. balsamic vinegar

Sauteed Shrimp Appetizer

4 to 5 shrimp per person

Extra virgin olive oil

Sliced garlic

2 oz. Tequila 1800

Seafood seasoning.

Mix salsa ingredients and set aside.

Saute shrimp in olive oil for 2 to 3 minutes with sliced garlic, seafood seasoning, salt and pepper. Remove pan from heat, add tequila (watch out for the flames), return and flame off the alcohol. Turn the burner off and toss the salsa in the pan. Serve in a salted rim margarita glass or on a small plate for a quick and easy appetizer.
