Lisa’s Mexican Casserole

2 tbsp of olive oil

1 1/2 lb of lean hamburger meat

1 yellow onion (chopped)

3 cloves of garlic (minced)

2 peppers (jalapeno or your favorite) (chopped)

1 1/2 tsp of cumin

1 tsp of cilantro

8 to 10 corn tortillas (sliced in strips and then in halves)

1 pkg of taco seasoning mix

1 10 oz. can of Red Sauce (Salsa Roja)

1 10 oz. can of Rotel (diced tomatoes and green chilies)

1 15 oz. can of whole kernel corn (drained and rinsed)

1 15 oz. can of black beans (drained and rinsed)

1 1/2 cup of  cheddar cheese (shredded)

vegetable oil spray

 

In a large skillet, brown the hamburger meat in the olive oil.  Once the meat has browned, add in the onion, garlic, pepper, cumin and cilantro.  Once the onion has become tender, add in the can of Rotel, the can of Red Sauce and the taco seasonings. Now bring the mixture to a simmer and add in the corn and black beans.  Now allow that to simmer for a few minutes. Next spray the bottom and sides of a 9 X 13 X 2 glass pan with the vegetable oil. Then spread the corn tortillas pieces over the bottom of the pan. Sprinkle about 1/2 cup of the cheese over the tortilla pieces. Then spoon the meat mixture over the top.  Then sprinkle the remainder of the cheese on top. Cover with foil and bake at 350 degrees for 30 minutes. Enjoy!
