Leslie Bailey's "Ham and Collard Greens in a Cup". A yummy way to make the kids eat their greens!

2 tbsp. of butter
1 tsp. of minced garlic
1 cup of chopped onion
1 can of cooked collards….drained and patted dry
8 oz. of ham diced
¼ tsp. of salt
¼ tsp. of pepper
Tbsp. of hot sauce
Crescent rolls
2 cups of Swiss cheese, or cheddar

Sauté garlic and onions in butter. Add greens, ham and salt, hot sauce and pepper.  Cook until all liquid evaporates.  Take a piece of crescent roll and cut into three parts.  Spray muffin tin pan with. Take three triangles of the rolls and lay them in muffin tin, so that the larger parts are in the bottom and the points outside the cup. Press bottom part together to form a "bowl."  Line with a piece of Swiss cheese and then spoon ham and green mixture on top of that. Put points together like a little pie crust.  Brush with butter and sprinkle with poppy seeds, crispy onions, more garlic etc. and bake at 350 till mixture is bubbly and crust is brown.
