Zucchini Taco & Saute Tuna

Zucchini Taco:

1/2 cup grated white cheddar cheese

6 inch flour tortillas

1/2 cup fine chopped jalapeno

1 sliced zucchini

salt and pepper to taste

Stuff the tortilla with thin layer of cheese, jalapenos, and zucchini. Fold in half and sear in a hot saute pan.

Saute Tuna:

8 oz. piece of sushi grade tuna

salt and pepper to taste

Heat a saute pan with a little oil, cook tuna to your desired temperature. Place on plate, top with a spicy pepper sauce or banana ketchup.
