PHOENIX (CBS5) -

A man accused of stabbing his mother at her Phoenix restaurant on July 2 pleaded not guilty in court on Thursday.

According to the police report, Michael Lee Hansen said he was trying to "cut his mother's head off" with a 7-inch knife he got from the restaurant, Sakura Sushi and Steakhouse, on East Mayo Boulevard.

The victim told police she was sitting in the restaurant when her son punched her, knocking her unconscious. When she came to, she walked into the kitchen. She said Hansen grabbed a knife from the kitchen and began stabbing her in the hands and neck. An employee said he saw Hansen kick the victim while she was lying on the ground. He asked the victim "where the photo was," according to the police report.

One of the workers was able to get the knife away from Hansen and help the victim out of the restaurant.

A family dining at the restaurant told police they saw the suspect charge toward the back of the restaurant and then heard screams.

According to the police report, Hansen said he punched his mother, tried to cut her head off, and had "failed to get his kill."

Hansen also told police the attack was related to pornographic photographs of him. No other details on a motive were given.

Police said the violence did not stop there.

While awaiting medical release from JCL Hospital, Hansen got out of bed and tried to remove handcuffs holding him to the bed, police said. The police report went on to say that Hansen took the stirrup off of the bed and charged at an officer. The officer used a stun gun on Hansen.

After arriving at Fourth Avenue Jail, Hansen assaulted another prisoner while they were sitting next to each other waiting to be interviewed by the jail medical staff. They both were handcuffed and Hansen wrapped the chain of his handcuffs around the victim's neck and pulled the victim to the floor before medical staff broke it up. Police said the assault was caught on the jail surveillance video.

Hansen is facing one count of second-degree attempted murder, two counts of assault and one count of criminal damage.

His next scheduled court appearance is Sept. 4.
