MONTGOMERY, AL (WSFA) - A recipe that was featured on Alabama Live Monday, won a local competition. Sandy's SPAMMIN' Onion Jammin' sandwiches were a hit at the Alabama National Fair and claimed one of the top recipes in the Great American Spam Championship.
To make her award winning creation: Sandy caramelizes onions with Hickory SPAM, brewed coffee and extra flavorings for her "jam" which is like a chutney. She marinates a second can of Hickory SPAM with similar ingredients and fries the slices with coffee granules for texture. She then assembles the sandwiches with Hawaiian rolls and a herb butter/cream cheese spread. The judges were wowed. Here's her recipe for those who want to try it out:
SPAMMIN' Onion Jammin' Sandwich
2 (12 oz) can SPAM Hickory Smoke Flavor, divided
2 large onions, sliced
2 1/2 cups brewed coffee, divided (+ 1 tablespoon granules)
1 cup brown sugar, divided
1/4 cup balsamic vinegar
1/4 cup apple cider
2 tablespoons molasses or cane syrup
1 tsp chili powder
8 oz. cream cheese
1/4 cup herb butter
12 Hawaiian rolls
For onion Jam: dice one can of SPAM; fry until crispy. Add onions and cook 10 minutes. Add 1/2 cup brewed coffee, 1/4 cup brown sugar, balsamic vinegar, apple cider, and molasses. Bring to a boil, reduce heat to low and cook 40 minutes.
For coffee covered SPAM: cut second can of SPAM into 12 slices. Marinade the slices in 2 cups brewed coffee, 1/4 cup brown sugar, and chili powder for 20 minutes. In medium bowl, combine 1/2 cup brown sugar with coffee granules. Pat onto SPAM slices and pan fry until crispy.
