In the Kitchen with Leslie Bailey: Andy's Sassy Sausage Soup

2 onions chopped

6 cloves of garlic, chopped

1 pound of conecuh sausage

1 bag of frozen black eyed peas

1 bag of frozen corn

2 cans diced tomatoes

2 quarts of ham or chicken stock

1 large bag of already cleaned collard greens

A hit of Tabasco sauce, Italian seasonings, black pepper and salt

Cut the sausage into 1/4 inch chunks. Brown in saute pan. Remove from pan when browned and saute onions and garlic until translucent. Add sausage, corn, diced tomatoes, black eyed peas, ham stock and cook over low heat. Add seasonings. Put collards in about an hour before serving.
