Leslie Bailey's "Luck of the Irish" corned beef and sauerkraut quesadilla.
What you need:
8 inch Flour tortillas
Corned Beef chopped into small pieces
Thousand Island dressing
What to do:
Heat butter in skillet until it is melted. Put one flour tortilla in the pan and turn the heat to medium. Top the tortilla with cheese, corned beef, thousand island dressing and sauerkraut. Place a second tortilla on top. Brown both sides of the quesadilla. Remove when cheese is melted.
