1 cup of chopped artichoke hearts...(the kind packed in water) drained well and cut into quarters
4 tbs of grated parmesean cheese
1/8 tsp of red pepper flakes
1/8 tsp of salt substitute
1 cup of egg substitute
1 cup of skim milk
In large skillet...spray pan with no calorie spray...saute veggies and remove from fire. In bowl blend parmesean, egg substitute and skim milk, salt substitue and red pepper flakes. Spray baking dish with cooking spray. Layer sauteed veggies. Pour egg mixture over top, bake at 350 for approx 30 minutes until light and puffy. Serve with fresh fruit!
