Shrimp Salad, Pasta and Punch from the Grand Hotel

Connecuh sausage and shrimp pasta

4 oz. Sliced connecuh sausage

1 tbsp butter

2 tsp chopped garlic

¼ julienne leeks

1-cup button muchrooms

1 red pepper julienne

8 ea. 16/20 shrimp peeled and deveined

1 tbsp creole seasoning 1

 bottle abita beer

8 oz. Heavy cream

1 ½ toamtoes diced

8 oz. Angel hair pasta cooked and oiled

 ¼ cup grated parmesan cheese

in a 400 degree oven, place sliced sausage on a sheet pan and roast till browned, remove from pan and place on a paper towel for later -sauté garlic in butter till lightly browned, add leeks, mushrooms, shrimp and red peppers, cook till just tender. -season with creole spice and deglaze with beer, reduce by ½, add cream, tomato and sausage -cook on medium heat till slightly thickened; then add cheese -heat pasta in boiling salted water till heated though, strain and place in sauce, mix together and serve topped with parmesan cheese.

Pickled Gulf shrimp and blue cheese salad with local romaine and herbed croutons


2cups sour cream

½ cup buttermilk

1 tbsp worchestershire

1 tsp tabasco

½ lemon juiced

½ lime juiced

½ cup caramalized onion

2 cups sweet home farms blue cheese

1 tsp cracked black pepper




1 head romaine

¼ cup shaved red onion

1 cup sweet home farms blue cheese

kosher salt

cracked black pepper



Pickled shrimp


12 u-12 shrimp

2 onions shaved thin

1 tsp celery seed

1-cup olive oil

8 cloves of garlic shaved thin

1 tsp fennel seed

1 tsp mustard seed

1 tsp black pepper

1 tsp coriander

1 jalapeno (optional)

¼ cup white wine vinegar

½ cup lemon juice


Combine all ingredients in a large bowl and toss together. Cover tightly and let it sit for at least 6 hours for the seasonings to set.

Equal parts:     

  • Orange Juice
  • Pineapple Juice
  • Apple Juice


Half as much Ginger Ale


Then add Cherry Juice or Grenadine (to color the punch)


Champaign (to desired amount)



Serve in punch bowl with ice.
