Sunny Lemon Bars

  • 1 package (18.25 ounces) lemon cake mix
  • 2 eggs, divided
  • 1/3 cup vegetable oil
  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup sugar
  • 2 teaspoons lemon juice
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, beat the cake mix, 1 egg, and oil until crumbly. Reserve 1 cup of the cake for topping; set aside. Press the remaining cake mixture into an ungreased 9" by 13" baking dish. Bake for 12 minutes, or until lightly browned.
  3. In a medium bowl, beat the cream cheese until creamy. Add the sugar, lemon juice, and remaining egg, beating until smooth. Pour the cream cheese mixture oven the baked crust and sprinkle with the reserved 1 cup cake mixture.
  4. Bake for 20 to 22 minutes, or until lightly browned. Let cool slightly, then cover and chill. Cut into bars and serve.
