Summertime Pizza

6 to 8 slices

  • 1 pound store bought pizza dough
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/4 pound fresh mozzarella cheese (cut into 1/8 inch-thick-slices)
  • 3 plum tomatoes, thinly sliced
  • 2 tablespoons chopped fresh basil
  1. Preheat the oven to 450 degrees. Using your fingertips or the heel of your hand, spread the dough to cover the bottom of a 12-inch pizza pan, creating a rim at the edges. With a fork, prick the dough 15 to 20 times.
  2. In a small bowl, combine the olive oil and garlic mix well and brush over the crust. Top the pizza with cheese and tomato slices.
  3. Bake for 12 to 14 minutes, or until the crust is crisp and brown. Remove from the oven and sprinkle with the basil. Slice and serve immediately.
