Apple Coleslaw

8 to 10 servings

  • 4 cups (1/2 head) red cabbage, cored and thinly sliced
  • 4 cups (1/2 head) green cabbage, cored and thinly sliced
  • 2 Granny Smith apples, cored and coarsely chopped
  • 3 carrots, peeled and shredded
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  1. In a large bowl, combine the red and green cabbage, apples and carrots.
  2. In a small bowl, combine the remaining ingredients; mix well. Pour the mayonnaise mixture over the cabbage mixture; toss well.
  3. Cover and chill until ready to serve.
