1 pack instant creamed potatoes made to package direction 2 c. shredded cheddar 1 c. sour cream 1 small can mexicorn, drained 2 c. Ruffle plain potatoe chips, crushed 1 stick butter, melted
Mix potatoes, 1 c. cheddar cheese, sour cream, mexicorn and blend well. Pour into a casserole dish. Mix potato chips, melted butter and remaining cheese together and pour on top of the mashed potatoes. Bake at 35 for 20-25 minutes.
