1 two pound pork tenderloin
1 jar peach preserves
1 cup seeded, chopped watermelon
1/2 cup strawberries
1/2 cup kiwifruit
1/4 cup peaches
3 tablespoons lime juice
4 teaspoons of honey
mint leaves if available, chopped
Grill or bake pork tenderloin until internal temperature is 160. Baste often with peach preserves.
Mix all of the fruits and lime juice and honey and mint leaves.
