The Amazing Muffin

1 1/2 cups sugar

1 cup canola oil

4 eggs

2 cups buttermilk

2 cups unbleached flour

2 cups whole wheat flour

4 teaspoons baking powder

2 teaspoons baking soda

2 teaspoons cinnamon

1 cup ground flax seed

3 apples diced

2 cups dried cranberries

2 cups walnuts, chopped in large pieces.

Preheat oven to 325.  Mix sugar, eggs and oil together.  in a separate bowl, mix flours, baking powder, baking soda and cinnamon.  Add dry ingredients to sugar/egg mixture.  Mix just enought to combine ingredients.  (It's ok if it does not look totally blended.)  Add fruit and nuts.  Scoop into 12 LARGE muffin cups that have been coated with baker's spray.  Bake for 30 minutes, until a toothpick or knife tester comes out clean.

Makes 12 huge muffins, or 24 large muffins.
