Snapper Pontchartrain

1/8 tsp of salt
1/8 tsp of white pepper
2 ounces of red pepper or Pimentoes
2 tbs of green onions
2 ounces of sliced mushrooms
2 ounces of butter
1 ounce of white wine
8 jumbo or lump crab meat
8 ounces 41-50 shrimp (pealed and deveined)
4 7oz snapper fillets
1/8 tsp of old bay seafood seasoning

Preheat over to 400 degrees. Combine salt, old bay seasoning, and white pepper in a small mixing bowl and combine the three together. Place the red snapper on a sheet pan an sprinkle the fillets with the pepper mixture. Bake the fish 15 to 20 minutes until the fish flakes. While the fish is baking, saute the onions, mushrooms, and bell pepper in the butter. Add wine, crab meat, and shrimp to the saute pan and warm all the ingredients together. Place sauce on the plate, top with red snapper, and then place the crab-shrimp mixture on top of the snapper fillet.
