Gooey Bars

Recipe from Ann Weaver of Guntersville, Ala.

Cake

  • 1 box carrot cake mix.
  • 1 egg
  • 1 stick melted butter
  1. Preheat oven to 350.
  2. Combine above ingredients and mix well. (Batter will be dry).
  3.  Pat into lightly greased 13 X 9 pan.

Filling

  • 1 8oz pkg cream cheese,softened
  • 2 eggs
  • 1 t. vanilla(optional)
  • 1 stick melted butter
  • 1 box powdered sugar
  • 1/2 - 1 cup chopped pecans
  1. Beat cream cheese until smooth. Add eggs and vanilla. Add butter; beat.
  2. Add powdered sugar, mix well. Add pecans last.
  3. Spread over cake mixture. Bake 40-45 minutes. You do not want to overbake.

The center should be gooey coming out of the oven. Serve hot and gooey or cool completely before serving.
