Sweet potato souffle

Recipe from Carolyn Davis of Pride, La.

Ingredients and Directions:

  • 2 cups mashed sweet potatoes
  • 1 egg
  • 1 Tablespoon vanilla
  • 1/2 stick margarine
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup coconut

Mix and bake at 325 degrees for 45 minutes (or until set)

Topping:

  • 1 small can crushed pineapple
  • 1 bottle maraschino cherries with juice 10 oz.
  • 1 cup sugar
  • 2 Tablespoons cornstarch

In a sauce pan mix sugar, cornstarch add cherries and juice and pineapple.

Add red food coloring. Bring to a boil and boil 2 minutes. Pour over baked potatoes.

 Eat and enjoy.
