Crab Bread and Southwestern Chicken Pasta Recipes

Crab Bread Recipe:


-8 oz. Cream Cheese (softened)

-6 oz. Crab Meat (imitiation is acceptable)

-3 oz. Picante Sauce

-3 oz. Cheeder Cheese Shredded

-1 each 12 inch French Bread

-4oz. Marinara Sauce Prepared


In a mixing bowl combine cream cheese, crab meat and picante sauce.  Mix thoroughly. Split French bread lengthwise.  Spread crab mixture event on both sides of French bread.  Top with cheddar cheese.  Back in 350 degree oven for 15 - 20 minutes or until cheese is melted and browned a little bit.  Remove from oven and cut into 2 inch pieces.  Place bowl of sauce in middle of plate and place pieces around.

Southwestern Chicken Pasta for 2 Recipe:


-12 oz. Chicken Breast, boneless, skinless Grilled, julienee

-3 oz. Black beans, cooked

-3 oz. Corn kernels, roasted

-3oz. Tomatoes, diced

-2 oz. bell peppers, julienne (red and green)

-2 oz. Onion julienne

-1 tbs Cajun Spices (Paul Prudhomme)

-1 tbs Cilantro chopped fresh

-3oz. white wine

-2 oz. Olive oil

-6oz. Alfredo sauce prepared

-8 oz. Cavatapi Pasta, cooked (you can use any pasta)


Heat oil in saute pan. Add chicken, onions and peppers.  Saute until onions become translucent.  Add beans, corn, tomatoes, wine, cilantro and spices.  Saute until hot.  Deglaze pan with wine.  If you like you can add a little more wine to your taste.  Add alfredo sauce and bring to simmer stirring occassionally.  Add pasta and toss to coat.  Pour into pasta bowl and garnish with Cajun spices and fresh sprig of cilantro.
