Peppers With A Pop!  featured on 12-31-06

8 Chili Peppers
2 c. shredded sharp cheddar
1/2 c. chopped tomato, onions, and green peppers
1/4 c. of jalapeno pepper, chopped
1/2 c. black eyed peas
1/4 tsp. garlic salt
Cut a slit in peppers, remove seeds carefully, and set aside. Mix all of the other ingredients together and stuff peppers. Bake @ 350 degrees on a parchment lined baking sheet for 20 mins. Serve with sour cream if you like.
