9/13/07 - Raspberry Cheddar Mold

Raspberry-Cheddar Mold

(Any flavor of jam will work with this recipe.)

4 Cups shredded sharp cheddar cheese

1 cup pecan pieces

1 cup mayonnaise

1 bunch scallions,chopped

1/2 teaspoon garlic salt

1 cup raspberry jam

Combine cheese, pecans, mayonnaise, scallions, and garlic salt. (If mixure neesd to be creamier, add 1/4 cup more mayonnaise)   Shape mixture into a ball, pressing in the top to form a well. Spoon raspberry jam into the well. Or, form cheese mixture into star or heart shapes, if desired.   Serve with crackers.

Yield: 8 servings
