9/20/07 - Momma Munoz's Incredible Rice


1 bag of Saffron rice
1/4 cup of Olive Oil
1 cup of chopped onion
1 cup of chopped red pepper and green pepper
1 cup of shredded chedder
1 16-20 oz can of Stewed tomatoes

Sautee rice, olive oil , onion and peppers together until onions and peppers are soft...
Add tomatoes and water to cover rice to top of saucepan...cover pan and cook on low until rice absorbs all of the water and is fluffy...
Stir well and top with cheese....when cheese is melted...dig in and enjoy
