Mixed berries with white chocolate whipped cream

Ingredients:

3 cups each raspberries, strawberries, blackberries, blueberries (any combination is great!)

2 ounces good-quality white chocolate (such as Lindt or Baker's), chopped

2 tablespoons plus 1/2 cup chilled whipping cream


1. Combine chopped white chocolate and 2 tablespoons whipping cream in small metal bowl. Set over small saucepan of simmering water and stir until white chocolate melts and mixture is smooth.  Cool white chocolate mixture 10 minutes. 

 

2. Beat remaining 1/2 cup chilled whipping cream in medium bowl until soft peaks form.

3. Fold in white chocolate mixture. (Can be prepared 1 day ahead if kept covered and refrigerated.)

4. Serve over berries in parfait cups.
