Chicken Apple Saute

1 Tbs. of corn oil

2 lg. boneless chicken breast

1 cup celery diagonally sliced

1 medium green pepper sliced lengthwise

1 medium onion sliced lengthwise

1 golden apple cored and sliced

1/2 cup apple juice

1 Tbs. of white wine vinegar

1 Tbs. cornstarch

1 Tbs. of soy sauce

Heat oil in non-stick skillet. Add chicken and saute until cooked. Remove chicken and celery, green pepper, onion and apple and stir fry for few minutes. Combine apple juice, vinegar, cornstarch, and soy sauce in a small bowl..then add to chicken. Cook until thickened, stirring constantly. This makes 4 servings....and has 238 calories and 7 grams of fat per serving!!
