03/25/09 - Bil's Butterbean Dip

Bil's Butterbean Dip

1 1/2 Cup of Cooked Lima Beans
1/2 Cup of Olive Oil
1 Sprig of Fresh Rosemary
1 Tsp. of Crushed Red Pepper or Hot Sauce
2 Tbs. of Chopped Garlic
1 Tsp. of Salt
Dash of Cracked Pepper
1 Tbs. of Lemon Juice
1/2 Cup of Chopped Black Olives
Crumbled Feta Cheese
1/2 Cup of Fresh Chopped Cilantro

Sautee Rosemary, Cilantro, Garlic, and Red Pepper together to release flavors.  Add Beans, stir well to coat them.  Cook for 5-6 minutes more.

Puree in food processor and add Lemon Juice and a bit more Olive Oil if needed.

Spoon Mixture onto platter.  Sprinkle top with Feta and Black Olives.  Drizzle a bit more Olive Oil on top.

Serve with toasted Baguettes, Crackers, or Pita Strips.  Chill before serving or serve at room temperature.
