Sausage Stuffed Squash

Sausage Stuffed Squash

3 medium squash
1/2 lb. PORK sausage
1/2 small onion, chopped 1/2 bell pepper, chopped small jalepeno pepper,
chopped 1 cup Pepperidge Farms Herb Seasoned Stuffing mix
3/4 cup medium cheddar cheese
grated 1/2 cup pepper jack cheese
grated 1 egg, beaten
salt and pepper to taste

Place whole squash in boiling , salted water and cook till tender, about ten minutes. Drain. Rinse with cool water. Set aside to cool. Meanwhile, brown sausage in pan on medium heat with peppers and onion. Drain. Cut off squash ends and slice lengthwise. Remove and discard seed. Remove pulp and add to sausage. Add stuffing mix, cheddar cheese, 1/4 cup pepper jack cheese, egg, salt and pepper. Mix well. Spoon into squash shells. Top with remainder pepper jack cheese. Place in baking dish sprayed with no-stick spray. Cook in oven at 350 degrees till cheese is bubbly.
