SASSY SPINACH EGG BAKE

1/3 CUP BUTTER
1 CUP OF RED & GREEN PEPPERS
1 CUP SLICED MUSHROOMS
1 POUND FRESH SPINACH
6 EGGS
2 CUPS OF DAY OLD BREAD
4 PRECOOKED SAUSAGE PATTIES
1/2 CUP OF SOUR CREAM
1 CUP OF SHREDDED CHEDDER
1 CUP OF PARMESEAN CHEESE

SAUTE PEPPERS, MUSHROOMS TOGETHER IN BUTTER FOR ABOUT 1 MINUTE.  ADD FRESH SPINACH AND COOK UNTIL WILTED...REMOVE FROM FLAME.
TAKE CASSEROLE DISH AND LAYER BOTTOM WITH DAY OLD BREAD.  CRUMBLE COOKED SAUSAGE ON TOP.
BEAT EGGS AND SOUR CREAM WITH CHEDDER CHEESE AND PEPPERS, MUSHROOM AND SPINACH MIXTURE.
POUR OVER BREAD AND SAUSAGE.
TOP WITH PARMESEAN.
BAKE AT 350 FOR 20-30 MINUTES OR UNTIL A KNIFE INSERTED COMES OUT CLEAN.
CUT INTO SQUARES AND SERVE HOT.
DOLLOP WITH MORE COUR CREAM, AS DESIRED.
