Roasted Potatoes

Recipe from Brandy Girdner of Stilwell, Okla.

Prep Time: 15 min
Total Time:  1 hr

6-8 New White Potatoes
1 Green Bell Pepper
1 Red Pepper
1 Purple Onion
2-3 Cloves of Garlic
Olive Oil to Coat ingredients
Seasoning Salt to taste of your preference

1.  Wash and cube potatoes, Slice Peppers and onions, place all above ingredients on a cookie sheet for oven cooking or roasting pan for the grill. 
2.  Sprinkle with seasoning salt, and coat with enough olive oil to keep from sticking to pan.
3.  Bake in oven at 450 degrees for approx 20-30 minutes, stirring halfway through.  If cooking on grill place roasting pan on grill and cook until all vegetable are tender.  Times may vary based on grill temp.

Yield: 8-10 servings
Comments: This is a very easy, and delicious recipe.
