CORN CAKES WITH SALSA AND SOUR CREAM

 1 CUP ALL PURPOSE FLOUR
1 CUP CORNMEAL
1 TSP OF BAKING POWDER
1 TSP OF SALT
6 OZ OF CREAM CHEESE, SOFTENED
1 CUP MILK
1 CUP BUTTER MELTED
6 EGGS
1 (11 OZ CAN OF WHOLE KERNEL CORN, DRAINED)
1 CUP SALSA DRAINED
6 SCALLIONS, CHOPPED
1 CUP SOUR CREAM
ADDITIONAL SALSA (OPTIONAL)

COMBINE FIRST 4 INGREDIENTS. SET ASIDE.

BEAT CREAM CHEESE UNTIL SMOOTH. ADD MILK, BUTTER AND EGGS, BEAT WELL. ADD FLOUR MIXTURE AND STIR JUST UNTIL DRY INGREDIENTS ARE MOISTENED. FOLD IN CORN, DRAINED SALSA AND SCALLIONS

FOR EACH CORN CAKE, POUR ABOUT ΒΌ CUP BATTER IN A GREASED HOT SKILLET. COOK ON MEDIUM HIGH HEAT UNTIL BUBBLES FORM ON TOP. TURN AND COOK UNTIL GOLDEN BROWN

SERVE WITH A  DOLLOP OF SOUR CREAM AND A KISS OF SALSA ON TOP
