Cooking with Leslie: Spring pasta salad

MONTGOMERY, AL (WSFA) - WSFA recipe for Wednesday March 30

Spring has sprung!

Recipe description: pasta salad with fresh peas, ham and sizzled cherry tomatoes

  • 2 cups of cooked pasta, what ever is your favorite shape
  • 3 to 4 tablespoons of olive oil
  • several cloves of garlic
  • ½ cup of diced scallions
  • 1 cup fresh English peas
  • 1 carton of cherry or grape tomatoes
  • 1 cup of diced ham
  • slivered red and yellow peppers
  • shaved parm or you can use feta

Directions: Heat oil.  Add English peas, tomatoes , slivered peppers garlic and cook for about two minutes. Add in scallions and diced ham and cook for about a minute more. Then season to taste with salt and pepper. When this mixture is hot, throw in pasta, stirring to coat it.  Put in bowl or on plate and top with cheese.  Serve immediately!
