Recipe: Leslie Bailey's 'Fourth of July Potatoes in a Pouch'

FOURTH OF JULY:  POTATOES IN A POUCH!

RUSSET POTATOES

VALDALIA ONIONS

RED PEPPERS

WHOLE GARLIC BULB

HALF EAR CORN

BUTTER/OLIVE OIL BLEND

SEASONINGS OF YOUR CHOICE

TEAR TWO BIG PIECES OF ALUMINUM FOIL AND PUT ONE ON TOP OF THE OTHER.

SLICE POTATOES, ONIONS, PEPPERS ETC IN THIN ROUNDS

MELT BUTTER AND ADD OLIVE OIL. ADD SEASONINGS  OF YOUR CHOICE.  POUR OVER POTATOS AND OTHER VEGGIES.  TOSS LIGHTLY.  ADD WHOLE BULB OF GARLIC

PUT ON ALUMINUM FOIL SQUARES AND FOLD UP TIGHTLY.  PUT THESE ON THE GRILL ABOUT 40 MINUTES BEFORE YOU ARE READY TO EAT. (about 45 minutes if you do them in the oven.) TURN A COUPLE OF TIMES.

WHEN DONE, TAKE GARLIC BULB AND SQUEEZE OUT THE GARLIC AND TOSS…SERVE HOT.  CAN TOP WITH SOUR CREAM OR CHEESE .  IT’S A GREAT WAY FOR EFFORTLESS VEGGIES TO CELEBRATE THE 4TH!
